Open Plate - The Table We Share is a pop-up dinner series at Restaurant Nomi in Gothenburg, February 26-March 8, 2025. With a Nose to Tail menu, the event focuses on sustainability by using the whole animal, with meat from Swedish organic farms. Open Plate and Nomi together create a platform for dialog and change through food.

Restaurant Nomi, Gothenburg - February 26-March 1 & March 5-8, 2025

Welcome to Open Plate's first pop-up, a tasting experience that celebrates sustainability and innovation through the food we eat. For two weeks, Restaurant Nomi in Gothenburg will be the stage for a unique Nose to Tail menu that challenges our eating habits and invites new perspectives. Open Plate is a platform for honest conversations, bold ideas and community around the table.

A Menu that Opens Your Senses

Our pop-up dinners celebrate the whole animal - from nose to tail. The meat comes from two of Sweden's most committed farms, and every week you get to experience a customized tasting menu created by knowledgeable chefs who are passionate about sustainability.

  • February 26 - March 1
    Focus on organic pigs from Ragnarssons EKO in Tvååker.
    • Gun Ragnarsson, farm owner and pioneer in sustainable pig farming, will be a guest on February 26 to talk about her work and how the whole animal is utilized.
  • March 5-8
    Focus on organic beef from Naturgården in Vallda.
    • Claes-Erik Bergstrand, the founder of the farm, will be a guest on March 5 to share his story of sustainable animal husbandry and life on the farm.

The food on both weeks pays homage to traditions from around the world. Whether it's flavorful tacos with organ meats, slow-cooked dishes inspired by Asia, or classic European small plates, the menu shows how alternative cuts can become part of our daily meals.
