Saori Ichihara has worked as as a chef at various restaurants in Japan and in Sweden, such as the acclaimed Esperanto, Shibumi, and Oaxen Krog before becoming the head chef at her own restaurant, Ichi, which focused on Nordic-Japanese cuisine. In 2015, she placed third in the Chef of the Year competition. Today, Saori freelances and operates various pop-up restaurants around the Nordic region.

Meet Nico, an Uruguayan chef now calling Gothenburg, Sweden his home. Drawing inspiration from the vibrant flavors of Latin America, Nico’s culinary journey began in prestigious kitchens across Uruguay, Spain, and Mexico, including Pujol.

Swilipino is a food and identity project run by Tintin Jonsson, a chef currently based in London who mostly cooks Filipino inspired food through the lens of her dual heritage as a Swedish Filipino. She’s often turning to the cuisine of the southern Philippines where her mom has roots, or fusing Filipino dishes with Swedish nostalgia.
