I'm Carlos Andrino, a culinary professional with a deep passion for both cooking and wine, I'm from Spain (Madrid) and I have developed over years my skills in the gastronomy industry in Spain, France, Italy and Sweden. My journey in the kitchen has been built on a commitment to quality, creativity, consistency and a love for crafting dining experiences. I specialize in creating dishes that tell a story, focus in fresh and seasonal ingredients and in this case, I would like to be able to recreate an approximation of Spanish cuisine from my point of view at Nomi restaurant.
Born in Kyushu, a region in southern Japan renowned for its natural beauty, he became captivated by the rich traditions of Japanese cuisine. He developed his skills at several prestigious restaurants throughout Japan. Driven by a passion to share authentic Japanese flavors, he later introduced the cuisine to France, Italy, Denmark, and Sweden, often incorporating local ingredients. Today, he offers a diverse range of dishes, from popular Japanese comfort food to traditional fare, at renowned restaurants like Sushi Oi and Tengu in Stockholm.
